Cheesecake Obsession


I have a mean sweet tooth, it has gotten 100% better on my new way of eating, but that doesn't mean I don't still enjoy good tasty sweets from time to time.

So when I see images of food I know I cannot eat because of the CARBS and sugar added I don't stop. I create ways to still be able to enjoy the foods I love, just in a healthier way.

My recent attacks have been Cheesecake. My greatest indulgence used to be the Cheesecake Factory. I absolutely love that place, but the things in the food are not good for me so I resist the urge and instead make my own delicious food.

I created a crust that even my family thought was graham cracker crust, but is not.

Here is the recipe for your crust


3/4 cup coconut flour
3 Tablespoons flax meal
1 Tablespoon almond flour
1/4 teaspoon salt
4 Tablespoons melted butter
2 Tablespoons melted coconut oil
10-15 drops liquid stevia
1/2 teaspoon vanilla flavor
1/2 teaspoon almond flavor
1/2 teaspoon fresh squeezed lemon juice

Mix dry ingredients first then add wet ingredients over the dry. Spread on a springform pan or 9" pie tin. Bake at 375 for 10-12 min. It will brown slightly. Once done mix the baked crust in the pan, then re press it on the pan. It is now ready for you to add your cheesecake. 


Cheesecake


16 ounces cream cheese, softened
1 teaspoon liquid stevia OR 1/2 teaspoon liquid stevia 1/4 cup xylitol
3 eggs
3/4 teaspoon vanilla
2 teaspoons Torani sugar free chocolate macadamia nut syrup (can find at Smart and Final)
1/2 teaspoon almond flavor
1/2 teaspoon fresh squeezed lemon juice. 

Mix/blend all ingredients well and spoon gently onto your crust. Bake at 350 for 20 min.

Topping

1-2 cups sour cream (I like more)
10-15 drops liquid stevia
1 teaspoon vanilla
1/2 teaspoon almond flavor
1/2 teaspoon fresh squeezed lemon juice.
-if you like it sweeter add a teaspoon Torani sugar free syrup

Mix well, spoon gently on top of cheesecake, Bake at 450 for 5-10 min. Chill before serving.
Serves 12-14. Carb count 2-3g each. 

The recipe above is for a good old plain cheesecake, I have added variations to the cheesecake portion by adding peppermint flavor (1 teaspoon) with green food coloring as well as Mango (2 sliced) in the cheesecake portion. The topping should stay the neutral same. The creation is yours, make it your own.





My Grasshopper Pie Cheesecake stayed with the 2-3g CARBS each piece while the Mango Cheesecake is 6g Carbs each piece.

I want to make a Banana Strawberry cheesecake next week, we will see how it turns out. AND YES you can eat one piece of these cheesecakes a day and still loose weight. Oh and each piece of pie is under 200 calories too! Until next time!
