Banana Coconut Pancakes


I posted an earlier post on pancakes and muffins. This morning I decided to do a twist on my pancake recipe to make it tropical. As always this is gluten free, sugar free and dairy free AND low carb. You are more then welcome to use 1/4 cup chopped banana instead of the imitation flavor banana that I used. Also for the sugar substitute use whatever kind of "sweetener" you prefer for approx 1/2 cup sugar sweet equivalent.  Follow me and Add me on Facebook for the most up to date recipes and information. Banana Coconut Pancakes with Strawberry Coconut Syrup. 


Dry Ingredients:
1/3 cup coconut flour
2 1/2 tablespoons coconut flakes (unsweetened)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon sea salt (with iodine)

Wet Ingredients:
3 eggs 
1 cup unsweetened coconut milk
1/2 teaspoon vanilla flavor
1 teaspoon coconut flavor
1 teaspoon banana flavor

"sugar" sweetener options: (I used a variation of xylitol and liquid stevia I suggest you use liquid stevia and erythritol)

1/4 teaspoon liquid stevia
1/8 cup xylitol or erythritol 

 Add all dry ingredients together, and then add all wet ingredients together
 Mix both wet and dry ingredients together. Consistency should look like this. 

 Oil your pan with coconut oil (3 tsp) and take 1/4 cup worth and put on heated pan. 
 Once pancake looks like this its time to flip it.
 In the midst of all this you can prepare your strawberry coconut syrup:
1/4 cup coconut oil
1 tsp coconut flavor
1 tsp strawberry flavor
9 drops liquid stevia
Mix well. Its ready to serve now.
