Breads


This is my go to guide for breads. I created this system to make it easier to remember. Of course depending on the consistency you desire of your "dough" you can add more liquids (coconut milk, almond milk, heavy cream or "oil"). You can use this guide for breads, cookies, cakes, muffins, biscuits, waffles, pancakes and so on. The basic recipe is as follows, I always use:

DRY INGREDIENTS:
2 cups of Flour (I choose between coconut flour, almond flour, flax seed meal, protein powder and occasionally buttermilk powder sparingly)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt

WET INGREDIENTS:
4 eggs (6 eggs if using all coconut flour)
1 tsp liquid stevia OR 1/2 tsp liquid stevia and 1/4 cup erythritol or xylitol "sugar substitutes" (omit for non sweetened breads)
1 tsp flavor of your choice (Vanilla, strawberry, coconut, maple, chocolate, pineapple, lemon juice etc.)
3/4 cup oil (choose from coconut oil, organic salted butter and coconut butter)
1 tbsp heavy cream

(~remember if needed add coconut milk or almond milk (unsweetened always) if consistency is too "dry" for what you are making)

Preheat oven to 350 Mix all dry ingredients, then blend all wet ingredients together separately. Fold into each other. Spray coconut oil cooking spray on your bake ware and cook for 15-20 minutes. Some ovens cook faster, watch your breads some will cook extremely fast. Make sure its cooked all the way through, test with a toothpick or knife or fork in the center of your bread. If comes out clean remove from oven and wait until its cooled then slice away.



Possible toppings:

Cream Cheese
Butter
Coconut Oil
Almond Butter
Natural Peanut Butter
Buttercream frosting (homemade)
Sliced fruit (once 1-2 month induction period is complete)
Cheese and garlic (for unsweetened breads and biscuits)

I never follow any recipe to a T, I find it fun personalizing the foods I make and create. Use my recipe above as a guide for you to follow, but also get creative with it in your own ways as well. The possibilities are endless, modify as needed. Enjoy! Happy Cooking!
